Chilli peppers are an extremely popular commodity across the globe and are a stable in several cuisines, mainly being used to add spice to dishes. The flavour, texture and shape all vary dramatically across chilli varieties. Depending on the variety there is also a significant variation in ‘spice’ levels, this is measured in Schoville heat units. For example, a Jalapeno is around 5000 Schoville, while a Scotch Bonnet is 100,000 and a Carolina Reaper, one of the hottest chilli peppers in the world, comes in at 1.6 million Schoville.
