Courgettes, also commonly known as Zucchini, are a type of summer squash that is harvested when the fruit is still immature. This means that the rind or skin and the seeds are still soft and edible. Courgettes are closely related to marrows and like all squash they originate from the Americas. However, the long cylindrical were first cultivated in northern Italy as late as the early part of the 19th century.
Due to several growing regions across the globe, courgettes are available all year round.
